Food, Fun and Face!

Welcome to my blog! I'm starting this blog to add some spice to some of your kitchens! I follow a primal lifestyle which basically means I eat a whole bunch of vegetables, good meats, some fruit, nuts and seeds and a little dairy. I avoid eating all grains and try not to eat processed food and limit the amount of sugar I throw down my throat. Basically the name of the game is to eat REAL FOOD. Sounds simple right? But sometimes people find it hard to start to eat this way. So this blog is here to help you (and me) throw together some awesome tasty food . So please stay a while and get your creative kitchen juices flowing again!!

Chicken Salad with a Mint, Coriander and Lemon Dressing

Day 2 of clean eating is underway and already feeling better for it. Maybe it's just a mental thing but that doesn't matter as long as you're in the right frame of mind then you'll make good decisions.

How many peeps out there actually plan out exactly what they are going to eat for the day? Or even the week for that matter? I would be interested to hear if you could leave comments below.

This salad is once again super easy and quick to make and tastes amaze-balls.

2x B/less & S/less Chicken Thighs.
Lettuce Leaves
Half a Capsicum
1x Tomato
Juice of half a Lemon
Extra Virgin Olive Oil
Fresh Mint
Fresh Coriander
Salt & Pepper

Firstly put a pan on a high heat.

Take your chicken thighs and lay them on a board and season one side with salt and pepper.

Lay the chicken thighs seasoned side down on the hot pan. There's no need to oil the pan or anything. There is enough fat in the chicken.

Once the thighs are in the pan then season the side facing up with salt and pepper.

Now time to start to mix all the salad bits together.

Rip up the lettuce leaves and put in a bowl.

Dice up Tomato and Capsicum and add to bowl.

Chop up a handful of mint and coriander and add to bowl.

Add a swirl of the olive oil.

Add the juice of half a lemon.

Give it all a good mix through.

By this stage it will be time to turn your chicken thighs over.

Cook them for another few minutes and they are cooked right through.

Remove from pan and cut up into slices and add to your salad.

Mix them through and enjoy!!

Tuna Scramble with Tomatoes and Spices

Once again I've been super slack at putting up posts to this blog. I can only say I've been lazy!!

Kristy and I are starting our own little challenge of clean eating today. So hopefully I can come up with a whole bunch of new meal ideas for you primal eaters.

I've found that the travel with the new job has been tough on my eating. And that has followed on to home where I've found myself just buying a whole bunch of crap that I don't need to eat but seem to feel the need. So to break the cycle I spent 15 minutes writing down exactly what I was going to eat for the month. I don't usually need to do this but I've let my eating slip so much that I need a kick in the pants to get back on track and having a meal plan sitting in front of me makes the job a whole bunch easier and holds me accountable.

So this morning I made an extremely simple scramble with Tuna and spices.

1x 85g can Tuna (in spring water)
1x small onion
Handful of Baby Tomatoes
3x Eggs
Dried oregano
Dried Basil
Salt & Pepper
Olive Oil

Put your frying pan on a high heat.

Add a swirl of olive oil to the pan.

Slice up your onion and add to the pan.

Drain the can of tuna and add to the pan.

Grind a little salt into the mixture and lots of pepper.

Add about a tsp of oregano and a tsp of the basil to the mixture and stir.

Slice up your baby tomatoes and add to the pan and stir.

In a separate bowl crack the 3 eggs and whisk up with a fork.

Once the tomatoes have fried for a couple of minutes drop in the eggs.

Leave it for about 45 seconds then mix around the mixture until the eggs have just cooked and then turn out the smoosh onto a plate or bowl.
