This recipe is a simple prawn salad. Takes about 20mins all up to prepare.
Ingredients:
As many Prawns as you desire
A big handful of Broccoli Florets
Salad Greens
1x small Onion
1x medium Tomato
Juice of 1 lemon
1x cup of chopped Cucumber
1x 100g packet Fressure Foods All Natural Guacamole
2x Knobs of Butter
Salt and Pepper
Put a frying pan on high heat and add a big knob of butter. Chop up the onion and add to pan.
Roughly cut the broccoli into bite size pieces. Once you can start to smell the onion cooking in the pan, add the broccoli. You don't need to cook the shit out of the broccoli. It's nice with a little bit of crunch. After a few minutes of frying off the broccoli add the lemon juice to the pan and stir.
2 minutes later take the broccoli and onion out and put to one side.
In the same pan add another knob of butter and let it melt.
Once the butter looks hot add the raw prawns. They will only take a short time to cook. Wait until they are pink and remove from the pan.
Roughly chop your salad greens and put in a lunch box, (or bowl if you are going to eat now!).
Chop up the tomatoes and cucumber and add to salad greens. Add the broccoli and onion mixture and throw in the prawns. Garnish with chopped spring onion. Season with salt and pepper.
You can add another squeeze of lemon or lime juice at this point if you like.
I took a packet of the Guacamole with me and emptied it on the salad when I was ready to eat it.
